The long thin rice grains be utilised as a sweet recipe as well. After the marvellous heavy flavoured biryani, we definitely crave for something sweet. Hence today we will try something new with the Basmati grains.

 

PAYESH RECIPE

Payesh or Kheer or Payasam or Phirni whatever you call it by but who cares its name. When served in front of you all you can is its amazing taste. This is a food which is made and is compulsory for every auspicious occasion in India. From serving it to the deities to serving it to someone having a birthday, anniversary, baby shower or rice ceremony. Any Indian ceremony cannot take place in absence of this. Hence let’s not waste time and jump into the awesome recipe.

 

INGREDIENTS

  1. 2L Od Milk
  2. 1/2 cup basmati rice
  3. 4 tablespoon sugar
  4. 4 tablespoon rice
  5. 15tablespoon ghee
  6. 4 green cardamon
  7. 1L water
  8. Pinch of salt

FOR GARNISHINING

  1. 18-25 Raisins
  2. 18-25 Almond, sliced
  3. 18-25 cashew nuts, chopped
  4. 1 teaspoon rosewater

 

RECIPE

First and foremost wash the rice and take out extra starch from it. repeating the washing for two to four ties. Then keep the rice aside.

take a large pan to add the milk on to the pan and then add the water. Here we are adding the water to let the rice boil. If we let the rice boil in the milk then the quantity of milk will reduce. At this point add a pinch of salt. It is a myth that adding salt to any recipe makes it pure.

Next, add the ghee to the rice lentil keep aside. Mix this very well.

Further, add the rice to the boiling milk. Then keep stirring this and keep an eye to it so that it does not stick to the open.

Then add the sugar to the boiling rice. Keep in mind that this is to be done once the rice is soft and boiled. If you add the sugar beforehand then sometimes the rice remains hard.

Then continue cooking until the milk is reduced. The quantity of the milk is as per your wish.

As the milk starts thickening add all the dry fruits to it like a raisin, almonds, chopped cashew nuts green cardamon etc.

Now just before you switch off the gas flame add the rose water to it.

Keep this aside and let it cool before you serve it.

This recipe is best for Durga Puja or Diwali enjoy with your friends and family.
