MOTIA PULAO

This amazing royal dish cannot be skipped when discussing basmati rice. Just like the grains, this dish is the dish for that special occasion. You can never skip this dish. It is simple to make yet adds that special flavour to your day. Be it birthdays, anniversaries or any other programme this dish stands out to be the hero of the occasion. Now let’s dive into cooking straight without wasting much time.

 

INGREDIENTS-

  • 2 cups basmati rice
  • 1 large red tomato
  • 2 green chillies
  • 2tbsp chopped green coriander
  • 1 cup paneer
  • ½ cup khoya
  • 2tbsp singhara ka atta
  • 4tbsp peanut oil or desi ghee
  • salt to as per taste

 

HOW TO COOK

  • Wash the basmati rice very well. Clean it 4-6 times until all the starch is washed out.
  •  Heat one tablespoon of ghee or oil in a pan. Then add the basmati rice to it and saute a little till the colour changes the rice is well coated with oil. Do not burn the rice at any point and keep stirring the rice.
  • Then add the salt as per taste and add sufficient water to it. Bring it to boil and then slightly reduce the flame of the gas. As it is cooking sometimes just give it a stir. Keep cooking until it softens.
  • Then as it is cooked remove it from the gas and keep the dish aside. Let it cool for 10-15, minutes till all the moisture is either absorbed or dried.
  • Then fluff the rice with a fork and deseed the tomato. Further, chop the tomatoes into slices and cut the green chillies and the onions.
  • No bring in the khoya and mash it as finely as possible, next add the atta and panner to make it dough. Then make small balls out of it and keep it aside.
  • Roll the balls in singhada ka atta and roll again between palms.
  • Then heat the remaining ghee or oil and deep fry the balls until it is golden in clour. Make sure to do it slightly golden as too much frying can make it hard and crispy which will not go with this dish.
  • Add the balls, all the chopped veggies like the tomatoes, chillies, coriander leaves and everything to the fluffed rice and keep mixing it. This should be done in light hand and heavy mixing may make the dish sticky.
  • Enjoy this dish with great raita or chicken recipe or maybe mutton.
