BASMATI RICE PILAF WITH DRIED FRUITS, ALMOND AND CHICKEN

Why restrict Basmati rice to biryani’s only when we can have a lot more from it. Let us bang this thinking of making only biryanis from basmati and explore some beautiful other recipes from automatic species of rice.

This is a delicious recipe filled with fruits, nuts, and chicken as well. A compact meal of all vitamins in it as well as protein. The aromatic rice adds an extremely rice flavour to it and makes it even tastier.

 

SERVINGS 4-5

INGREDIENTS

  • 1-1/2 cup of basmati rice
  • 1/2 cup of finely chopped onions
  • 3 tablespoons of butter
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of turmeric
  • 2-4 cloves of minced garlic
  • 1-1/4 cups of water
  • 1/4 cup sliced almond, heated on a pan until golden brown
  • 1-1/4 teaspoon of salt
  • 1/3 cup of dried fruits of your chose, I have personally used currants, raisins, apricot, Kaju all finely chopped
  • 1/4 teaspoon of ground black pepper
  • Tossed chicken 100g
  • 1 teaspoon Vinegar
  • 2 green chillies
  • 1 teaspoon soya sauce

 

 

Chicken Recipe-

Wash the chopped chickens and add oil (of your choice) to it. Add finely chopped garlic, green chillies and black pepper to it. Add a little bit of vinegar and soya sauce and mix it well. Keep this aside for 15-30min. Now heat the pan and add the chicken to it cook it for 5-7 min and add water to it and keep it in simmer. After 20-25min open the lid and cook until its completely dry.

 

LET”S COOK

Take the rice in a medium bowl and add enough water to it. Wash the rice very well and take out all the excess starch from it. Now replace the water and repeat this process four to five tie. After that carefully drain the water away and keep the rice bowl aside.

Next heat a pot or the utensil you have a pan to cook in. I prefer pressure cooker hence in a medium heat pressure more ok I will give the butter to melt. After the butter is completely melted I have added onions and cook it for bout 4min until it is soft but not brown. Then I have added the best ingredients to the cooking pan like the turmeric, garlic, cinnamon, cumin and have coked it for 30-45 minutes until it has started leaving the fragrance.

Now add the rice to the masalas in there and give a nice mix. Continue this method for about 3-4 minutes. Then add the water, pepper and salt to the rice and bring it to boil. Now reduce the heat to simmer and let it cook in this flamed for about 18-25 minute until all the water is soaked. After every 5-6 minutes give your rice a slight stir so that it does not stick to the pan. Now after 12 minutes add the chickens to it. Then when the food is completely dry add all the dry fruits over the rice and sprinkle but you need not mix it.

Keep like this for 10 min and let the rice soak in the flavours of dry fruits. After that serve the amazing delicacy.
